Lentil Dip for the Munch

This lentil dip is delicious and easy to make ahead so you have something to conveniently munch on all week. Eat it with pita, crackers, with rice or naan. 

In the picture below the lentil dip is served with pickles, 
grilled mushrooms, and peppers, with a bean dip as well as a fresh hummus. 

Ingredients
  • ½ cup dry lentils 
  • 2 cups water
  • 2 whole garlic cloves
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 2-3 tablespoons olive oil (more oil for creamier texture)
  • salt and ground black pepper, to taste

Instructions
  1. In a small saucepan, combine the lentils, water and garlic cloves.
  2. Simmer about 40 min, until the lentils are soft.
  3. In a food processor, add the cooked lentils and garlic, lemon juice, and cumin.
  4. Pulse to combine for about 1 minute.
  5. Slowly add the olive oil until you reach your desired consistency.
  6. Add salt and ground black pepper, to taste.
